Gary started in the restaurant trade in 1996, opening ENIGMA at Brighton (otherwise known as little Greece). Gary’s background in the kitchen began as a lad, learning first hand the key to Greek cuisine is keeping ‘home style’. Through observing his mother and aunty busy in the kitchen, Gary was taught the ‘tricks’ of the trade, that no school or college can teach. Gary lead Enigma to become an instant success ensuring quality in it’s traditional Greek cuisine and hospitality.
In 1997 Gary introduced an original of combining his love of Greek food, with the concept of Yum Cha creating an infusion that could not and would not go unnoticed. Greek Yum Cha was born and soon the name of Gary Macris and Greek Yum Cha went hand in hand. Also in 1997 Sydney’s Good Weekender interviewed Gary Macris and reported on the phenomenon that was Gary’s original Greek Yum Cha. Word spread and soon all of Sydney was talking about this food explosion!
